Visitor:                                                                                                                                     My friend keeps asking about this naan, bread-like thing she had in a restaurant in London. She says it was called Pashvari (hopefully I'm spelling it right) bread or naan. It was a stuffed naan with coconut and stuff. I have never had anything like that before. If you know what she is talking about please sent me the recipe or send me a recipe of something similar.     Pinal Gandhi

Hi Vilsy Joshi,

Squid are normally used in Thai and vietamese cooking, They are very rarely used in indian cooking , here are couple of recipes which are indianized. Enjoy cooking and tasting them.

Squid Curry

Servings: 4

Ingredients:

1 1/2 pounds squid, cleaned

15 garlic cloves, peeled

1/2 cup olive oil

1 teaspoon salt

1 teaspoon freshly ground black pepper

2 large tomatoes, peeled, seeded and diced

1 bunch cilantro, chopped

1 tsp Garam masala

1/2 tsp chili powder

Preparations:

Cut the squid into 1/4inch rings. Wash, dry and place in a mixing bowl. Puree the garlic with 1/4 cup of the olive oil in a blender until smooth. Pour over the squid. Add the salt and chili powder and garam masala, tossing to combine. Heat a dry medium skillet over high heat. Then add a generous tablespoon of the remaining olive oil and heat until almost smoking. Pour in one third of the marinated squid and sauté about 30 seconds. Stir in one third each of the tomatoes and cilantro and cook about 2 minutes longer, just until the tomatoes dissolve and the garlic colors slightly. Transfer to a platter, wipe out the skillet and repeat two times. Serve hot over rice pulao.

Grilled Squid

1 pound cleaned squid

1 tablespoon salt

1/2 cup cilantro leaves

 

Marinade:

Pinch of pepper

2 cloves garlic, crushed

2 tablespoons peanut oil

1 teaspoon Garam Masala

1 teaspoon curry powder

1 tablespoon finely chopped lemongrass

1 tablespoon thick soy sauce

1 teaspoon sesame oil

1 tablespoon lime juice

1 teaspoon sugar

Rub the squid with salt and rinse. Slit and flatten the squid sac and make diagonal cuts on the inside surface. Cut into bite-sized pieces. Combine marinade ingredients, then marinate squid for 1 hour. Grill squid until just tender (about 2 minutes each side). Arrange on a serving platter and garnish with cilantro.

Thank You for writing to me Indian delicacies only gives recipes for Indian food normally because our website is basically for Indian food and related topics, but anyway I researched about piki bread and found the recipe you need, enjoy making it with your students

It is actually made with blue corn flour by native American Indians

Two eggs

1 1/2 cups milk

1 tablespoon butter

3/4 cup all-purpose flour

3/4 cup Blue roasted cornmeal

1 1/2 teaspoons baking soda

2 tablespoons sugar

1 teaspoon salt

Mix all ingredients in a blender. Let stand for 5 minutes. Do not re-mix or stir. Pour serving sized amounts from blender to lightly oiled grill. Wait until bubbles form on top of flapjack then flip artfully  Remove from grill when second side is cooked. Serve topped with a pat of butter and syrup, marmalade, applesauce, or whatever. Enjoy!

Hi Deborah, 
The recipe for chicken tikka is on www.indiandelicacies.com/chictikka.htm do the chicken the same way and keep it aside.
Now chop a onion fine and fry it in 1 tbsp oil till golden brown, add 1tsp garlic and 1 tsp ginger paste and fry for 3 minutes, add 200 gms tomato puree cook with 1/2 cup water till the smell of tomato disappears, now add chicken tikka salt to taste and 1tsp chili powder and cook for 5 more minutes mixing well. Add 100 ml fresh cream ,1tsp garam masala and mix well and cook for 5 more minutes and take off heat.

Hello, I had eaten some Indian food that I really like. It is made mainly of chick peas in a masala curry sauce. It was pretty spicy and I ate it with naans. I really enjoyed the food and want to learn how to make it at home. Could you please send me a recipe? I thought that it would be easy to find since it is at all Indian restaurants that I've been to. I think it is called "chana masala" , but I've probably spelled it incorrectly. That is just how it sounds! Well, if you can help, it will be greatly appreciated!!  Caster
