Tomato rice
Preparation time 20min cooking time 30 mins serves 4
Ingredients 1 cup long grained rice 4 large tomatoes 2-3 medium onions chopped finely 2 green chilies, chopped finely 1/2 turmeric powder salt for taste
Masala 2 teaspoons coriander seeds 3 teaspoons Bengal gram dhal 1 tea spoon mustard seeds 2 table spoons peanuts a few curry leaves
Method Chop the tomatoes and liquidize in a blender. Strain the juice. Set aside. Fry all the ingredients of masala in about 2 tea spoons of oil. Powder them fine and keep aside. Pressure cook the rice and spread on a platter to cool. In a pan add the tomato juice, salt and turmeric powder and simmer till it thickens. add the ground masala powder and mix well. keep it aside. Heat 2 tea spoons oil and 2 tea spoons ghee, add all the ingredients for tempering. When the mustard seeds splutter, add chopped green chilles,onion and fry for a few minutes till golden. Add rice and the concentrate. Mix well. Serve Hot with fried rice wafers or papads.
