Stuffed Tomatoes Ingredients: 4 Ripe and Big tomatoes or Beef tomatoes For the filling: 2 potatoes 1 small onion Scooped flesh of tomatoes 1 tsp chili powder 1 tsp garlic paste 1 tsp cumin powder 1 tsp coriander powder grated cheese (optional) 1 tbsp butter 1 tbsp oil salt to taste Method: 1.Cut the top of the tomatoes carefully and lift off like a lid take a spoon and carefully scoop the insides and place it in a bowl. 2. Keep the tomato aside and repeat the process for the rest of the tomatoes. For the filling: 1. Boil the potatoes, peel and chop them. 2. Take a pan and fry the onion in the oil till translucent and then add the garlic paste and fry it for a minute. 3. now add the potatoes, Scooped flesh of tomatoes and the rest of the ingredients and cook for 8 minutes on medium mixing well and mashing the potatoes coarsely. Now fill the tomatoes with the filling and top them with grated cheese or butter if cheese is not preferred , and bake them in a oven at 180 degrees for 15 minutes. Serve them with bread or chapathis or even plain rice. |
