Spinach Chicken Serves 4 Ingredients: 1 kg chicken with or without bones 500gms spinach chopped 1 large onion chopped 2 chillies 1 tbsp garlic paste 1 tbsp ginger paste pinch of turmeric 1 tbsp chilli powder salt to taste 1 tbsp garam masala 3 tbsp oil Bunch of coriander (optional) Method: Chop the onions and chillies very finely. Take a non stick pan and heat the oil and fry the onions and chillies till golden brown add the chopped spinach and fry for 5 minutes till the water in the spinach is absorbed. add chicken ,turmeric ,chili powder and salt and cook on high heat turning for 3 minutes , then turn down the heat to medium and let the chicken cook slowly till it starts browning , then add the garam masala powder and the coriander leaves and let it fry for 5 more minutes. Serve hot with rice.
