Chicken Satay Sandwich

Ingredients:

Shredded roast chicken ( see roast chicken sandwich)

3 pieces tomato

ice berg lettuce

cucumber slices

Satay Sauce

Method:

For satay sauce:

for 11/2 cups

1/2 cup peanut butter

125ml cup coconut cream

125ml water

2 tsp curry powder

2 tsp soy sauce

1 tbsp sugar

combine all the ingredients for satay sauce in a sauce pan and mix well. Cook over medium low heat stirring until it becomes saucy. This can be refrigerated and can be used for satay curries too.

For sandwich:

take 2 bread slices and butter them slightly. Now place the chicken  and top it with cucumber, tomato and lettuce and top it with some Satay sauce.
