Spanish Omelette
This dish needs a microwave with grill. Ingredients: 1 tbsp olive oil 6 spring onions sliced 1/2 small red capsicum sliced 1/2 small green capsicum sliced 175g potato cooked and sliced 5 eggs beaten 1 tsp chili powder salt to taste 75g Cheddar cheese 1 tbsp chopped coriander leaves Method: Place the oil in a10" flan dish together with spring onion , red and green capsicum, mix well and cook on high for 2-3 minutes until tender. Add the potato ensuring the mixture is evenly distributed over the base of the flan dish, Pour in the beaten egg. Season with salt and chili powder and coriander. Place on low rack, cook on dual grill medium for 9-10 minutes until evenly brown and crispy.
