VEGETABLE BRIYANI:- home made recipe

 

Ingredients:

4 Cups Basamati Rice- Soak for 20 - 25 mins. - wash, drain & keep aside; Water - 7 Cups; Assorted Vegetables like Carrots, Beans,Peas;Capsicum, Cauliflower;Potatoes etc.); Onions 2 Big Ones Sliced; 6-8 Green Chillies slit in two; 1/2 Bundle Corriander leaves; Tomatoes 4 Big Ones; Ginger/Garlic Paste 1 level Tbspn each; Mint leaves 12 - 15 no's; Spices(Pattai - 2" pcs- 2 No's Cloves/elaka 8 no's-each); Oil - 1/4 Cup; Salt to Taste; 1/4 level Tspn- Turmeric Pwder; Chillie Pwd - 1 level Tbspn. Limes 2 No's(Only Juice).

Method:

Put oil in a vessel & fry the sliced onions, green chilles with the spices, curry leaves, min leaves till onions are brown, add the ginger/garlice paste lower heat & fry till raw smell goes, now add the salt, Turmeric Pwd, Chillie Pwd, Chopped Tomatoes, stir well add the vegetables, Rice, & the required quantity of water, & bring to boil, then lower heat & allow to cook for 8 - 10 mins. Remove from fire & garnish with sliced fried onions & chopped Corriander. Serve with Curd Raita. 

Pl. Note: If you are using an Electric Rice Cooker - all you have to do is Soak the Rice for 20/25 mins Wash & drain away all the water & put the Rice into the Cooker Bucket, add the required quantity of water - Fry all the Masala's as mentioned and put it on top of the Rice/Water which is in the cooker Bucket, put the cooker on & allow it to cook; it will automatically cut off once the rice is done - in the meantime you could get the Raitha ready.
