Dosa

Ingredients:

3 cups rice

1 up urad or black gram dal

salt to taste

Method:

Soak the rice and dal for 8 hours or overnight. Grind them to form a smooth batter. Leave it overnight or 24 hours till it rises. Mix salt.

Now heat a tava or a griddle preferably non stick. Take a ladle and pour ladle full of batter on the griddle and rotate the ladle in a clockwise direction over the poured batter so that it spreads evenly and round like a pancake. Pour a table spoon of oil around the edges and let it fry till golden brown then loosening the edges turn it over the side. Let it cook for 2 minutes and fold it and take off heat. Serve with coconut chutney or any pickle. Repeat the procedure for next dosa. Sprinkle water in between on the griddle for surface cooling.
