Chicken Biryani with Potatoes
Serves 4 Preparation Time: 20 Minutes Cooking Time: 20 Minutes Ingredients: 4 TBS oil or ghee 2 Pounds Chicken 3Large onions 1tsp. Cumin powder 1tsp. Coriander powder 1tsp. Garam Masala 2 potatoes 2TBS grated coconut 1TBS Garlic Paste 1 tsp. Ginger paste 3 TSP sour cream 1 TBS Chilli powder 2 TBS lime juice Salt to taste A handful of Mint 21/2 Cups cooked Basmati rice Method of Preparation: Fry 2 chopped onions till translucent and blend them in a blender and keep the paste aside. Take a big mixing bowl add cumin powder, coriander powder, chilli powder, garam masala, gingergarlic paste, sour cream, lime juice salt and mix them thoroughly marinate the chicken in this mixture for about 2 hours. Take a deep bottomed cooking dish and fry the remaining 1 onion till it is golden and then add the chicken mixture and diced potatoes and cook on high heat for 4 minutes stirring thoroughly, then pour 4 TBS of water and add the mint to it and covering it with a lid cook it till the chicken is cooked and the oil separates. Add the cooked rice to the dish and mix well carefully without mashing the chicken pieces. Serve it hot with any Raita. |
