Cauliflower Biryani
Ingredients: 1 tbsp oil 2 tsp mustard seeds 2 tsp sesame seeds 225gm Basmati rice 2 tsp chili powder pinch of turmeric 1 tsp ground coriander 1 1/2 tsp garam masala 15 ml water 1 medium cauliflower cut into florets 1/2 red capsicum cut into strips 1/2 green capsicum cut into strips 400gms canned tomatoes 1 tbsp ginger garlic paste salt to taste Method: Place oil mustard and sesame seeds in a large bowl, heat on high for 1 minute. Add rice mix well and cook on high for 2 minutes. Mix the chili powder coriander powder, garam masala and turmeric into a paste with the 1tbsp of water and mix the paste with the rice. Add all the vegetables except tomatoes and cook on high for 2-3 minutes. Drain the tomatoes and reserve the juice. Add tomatoes to the rice mixture and stir well . Add enough boiling water to tomato juice to make 550 ml of water and add it to rice and mix well. Cook for 20-22 minutes stirring occasionally.
