BRINJAL RICE : method – 1 - Home-made Recipe.

Ingredients:

 

3 cups Cooked Rice; 3 Tbspns Oil; 1 ½ tspn. Mustard Seeds; a few Curry Leaves, 3 cups of Brinjals cut into bits, Salt to taste, 3 tbspns Green Chillies finely sliced, 1 tspn. Turmeric pwd. 3 tbspns fresh lemon Jucie.

Method : In a large pan fry the Mustard seeds, Curry leaves, add the Vegetable & Chillies & stir on low flame cover & cook for 10 mins. Add Salt & Turmeric Powder cook for another 5 mins – Remove from Fire & add lemon Juice stir well & mix with the Rice – Stir gently allowing each grain to coat.

 

 

 

Brinjal Masala Rice: Method 2 - home made recipe

Ingredients:

3 cups cooked Rice (Cook the Rice with a tablespoon unsalted butter-so that the grains do not stick to each other); 3 Tbspns Oil; ½ tspn Mustard Seeds; Curry leaves – few; a pinch of Asafotedia; Salt to Taste; Brinjals cut into 1" strips; Chillie Pwd 1 ½ tbspns; Corriander Pwd 1 Tbspn; Turmeric Pwd ½ Tspn.; Jeera Pwd. – 1 level Tspn; 3 – 5 Tbspns. of Pullidorai Mix Powder.

Method:

Cut brinjals into strips wash, drain & keep aside. Pour Oil in a Kadai, when hot add the Mustard Seeds, Curry Leaves, Salt & Asafotedia – when the Mustard Seeds start cracking add the Brinjal pieces & fry till they are half cooked, when half cooked add the Chillie pwd. Corriander Pwd, Turmeric Pwd, Jeera Pwd. & continue to fry on low flame when almost done add the Pulliyodorai mix – for a minute, then add the cooked Rice & stir gently till all the grains are coated – serve hot.
