ALOO PARATHA
Cooking time : 20 minutes Serves 4 Ingredients: 2 medium potatoes (boiled and mashed) 1 tsp. Coriander powder 1 tsp. Cumin powder 1/2 tsp. Amchoor powder or ground mango powder 1 tsp. Chilli powder 1 tsp. Garlic puree salt to taste finely chopped coriander 2 cups wheat flour Method of cooking: Make a soft dough with the wheat flour with sufficient amount of water and salt, keep it aside covered with a lid. Mix rest of the ingredients well in a mixing bowl. Take the dough and make a medium sized ball and press it flat, then make a lime sized ball with the potato mixture and put it in the flattened dough and try to cover it with the dough the potato mixture should be stuffed inside the dough. Take a rolling pin and carefully roll the dough about 41/2 inches, now take a nonstick frying pan add some oil to it and after the oil is heated place the paratha on to the pan and fry it evenly on both sides. Repeat the procedure with the rest of the dough.
