Adai

Ingredients:

1/2 cup urad dal

1/2 cup red gram dal

1/2 cup Bengal gram dal

1 cup rice

4-6 red chilies

4 tbsp grated coconut

1 large onion chopped fine

1/2 tsp asafetida (optional)

bunch of chopped coriander leaves

Method:

Soak all the dals and rice in 2 cups of water for 2 hours. Grind Coarsely. Add rest of the ingredients to the batter.

Now heat a tava or a griddle preferably non stick. Take a ladle and pour ladle full of batter on the griddle and rotate the ladle in a clockwise direction over the poured batter so that it spreads evenly and round like a pancake. Pour a table spoon of oil around the edges and let it fry till golden brown then loosening the edges turn it over the side. Let it cook for 2 minutes and fold it and take off heat. Serve with coconut milk and jaggery. Repeat the procedure for next adai. Sprinkle water in between on the griddle for surface cooling.
